Vegan, Gluten-Free Rawmio Brownies

Rawmio lovers rejoice! These brownies are destined to become your new favorite treat. They're rich and perfectly moist with that perfect hint of chocolate hazelnut flavor. They also happen to be gluten-free, oil-free, vegan, paleo-friendly and contain nothing but good-for-you ingredients like sweet potato, raw almond butter, raw cacao, raw chocolate and almond flour.

Vegan, Gluten-Free Rawmio Brownies

The Recipe

Rawmio Sweet Potato Brownies

Ingredients

3/4 cup mashed sweet potato (2 small or 1 large)
1/2 cup smooth raw almond butter
1/3 cup blanched almond flour
4 tablespoons raw cacao powder
1/4 cup coconut sugar
3 Tbs maple syrup
2 Rawmio Essentials Bars 85% Quite Dark
2 teaspoons pure vanilla extract
1 teaspoon baking soda
1/4 teaspoon Himalayan salt

Instructions

1. Preheat the oven to 350 degrees Fahrenheit. Line an 8x8 baking pan with parchment paper. You can also drizzle a little coconut oil over the parchment paper for additional anti-stick power.

2. Wash, peel, cube and steam the sweet potato until well cooked, then mash with a fork. Place 3/4 cup of the mashed sweet potato in a large bowl, followed by the melted Rawmio Chocolate Hazelnut Spread, smooth raw almond butter, maple syrup and vanilla extract. Stir well to combine.

3. In a separate mixing bowl combine the blanched almond flour, cacao powder, baking soda,
and chopped Rawmio Essentials Bars.

4. Combine wet and dry ingredients together and mix thoroughly by hand or with an electric mixer until evenly incorporated.

5. Place brownie mixture in lined baking pan and cook at 350 degrees F for 25-30 minutes. They'll be done when you can stick a metal fork through the top and it comes out clean, and the the texture appears spongey.

Allow brownies to cool thoroughly in pan before cutting. Store in the fridge. Makes 9 medium brownies.
