Vegan Chickpea Stuffed Grapes Leaves with Lemon Tahini Dressing
Tahini is a staple ingredient in many Middle Eastern dishes. I love this Lemon Tahini Dressing that pairs perfectly with these chickpea rice stuffed grape leaves.
The process of making these stuffed grape leaves is shortened from traditional recipes by using cooked rice and canned chickpeas. You can also try this dressing on your favorite roasted vegetables or as dressing for a salad.
The Recipe
Vegan Chickpea Stuffed Grapes Leaves with Lemon Tahini Dressing
Ingredients
1 jar grape leaves
Stuffing
1 can chickpeas (drained)
1 small onion (chopped)
2 garlic cloves (minced)
1 Tbsp olive oil
1 tsp Za’atar seasoning
½ tsp salt
¼ tsp black pepper
½ cup cooked white rice
Zest of ½ lemon
Lemon Tahini Dressing
Zest of ½ lemon
Juice of 1 lemon
2 Tbsp olive oil
½ cup Dastony Tahini
½ cup water
¼ tsp black pepper
½ tsp salt
½ tsp Za’atar seasoning
½ tsp garlic powder
Steps
1. Add 1 Tbsp olive oil to a pan and sauté onions. After about 1-2 minute, add in the garlic and sauté for additional 30 seconds. Add in the chickpeas and continue cooking for another minute, just enough to warm them up.
2. Chop chickpeas in food processor or use a knife.
3. In a mixing bowl, combine cooked rice, onion and garlic mixture, and the remaining ingredients for your stuffing. Set aside.
4. To make the lemon tahini dressing, add all ingredients in a small bowl or jar.
5. To assemble grape leaves, take one grape leaf from jar and make sure to cut off the stem.
6. Scoop 1 Tbsp filling and place on the middle of your grape leaf. Start rolling from the stem end, tucking in the sides as you roll (similar to rolling a burrito). Continue until you run out of stuffing.
7. Serve your stuffed grape leaves with the lemon tahini dressing.
