It might not be shorts and tank top weather quite yet, but it’s certainly warm enough to turn off the stove, dust off that blender and make some yummy raw recipes.

Spring is a great time to make some seasonal dietary adjustments. If we tune into our body's needs and signals we may discover that we naturally start to gravitate towards more raw foods and lighter fare this time of year. If you’ve been cooking up hearty stews all winter long, this recipe will be a refreshing change of pace! It’s vibrant and flavorful and also helps support gut health, detoxification and immunity with probiotic-rich plant-based yogurt and enzyme and nutrient-rich ingredients like fresh cucumber, lime, and herbs. By blending in a few doses of hemp CBD, you can infuse the recipe with additional anti-inflammatory and immune-boosting properties. Chilled CBD-Infused Cucumber Lime Soup

The Recipe


Chilled CBD-Infused Cucumber Lime Soup
Makes 24 oz

Ingredients

1 peeled cucumber, chopped (2 cups)

1 cup plain unsweetened cashew or coconut yogurt

1/2 cup purified water

2 dropperfuls Veggimins Hemp CBD (we used 60 mg, but adjust to your preference)

1-1.5 Tbs fresh lime juice - depends on your preferred level of tang

1 tsp fresh lime zest

1 heaped Tbs Dastony raw sesame tahini

3 Tbs chives chopped

3 Tbs dill chopped

1 jalapeño pepper - diced

1 tsp cold pressed olive oil

1/2 tsp Himalayan pink salt

1/2 tsp black pepper

4 ice cubes

Instructions

1. In a blender, combine all ingredients and puree until smooth. If ice cubes aren't used, chill in the fridge before serving. Serve with a drizzle of olive oil, a sprinkle of paprika, and fresh herbs to garnish.
