Refreshing CBD Matcha Mint Chip Shake

We've all been there. Those hot summer days when all you want to do is lay around chugging a milkshake with the AC blasting. Well, we can't help with the AC part, but we do have the perfect healthy shake recipe to help keep you feeling minty cool, refreshed, and energized. What's even better, this recipe is free of dairy and refined sugar, meaning no annoying tummy bloat or blood sugar spikes and crashes. It's also packed with other health benefits thanks to a dynamic combination of plant-based ingredients with superfood status.

What's inside

Matcha, a concentrated powdered version of green tea leaves, is often seen in latte form, but the same powder can also be added to smoothies and shakes. It's chock full of antioxidants that help fight free radical damage and keep inflammation at bay. It also contains an amino acid known as L-theanine which has been shown to help reduce stress and relax the mind. Pair that with its caffeine content and you get a nice mellow energy pick-me-up that is much more gentle than coffee.

Speaking of stress reduction, CBD works wonders in this area as well. CBD is short for cannabidiol, a non-psychoactive cannabinoid that attaches to special endocannabinoid receptors within our body which help regulate our nervous system and immune system. We used our organic 500 mg peppermint extract in this recipe for a solid dose of chill.

Instead of using real ice cream and milk for creaminess, we used raw coconut meat and fresh coconut water. Coconut meat is a great source of easy to digest fats and also contains plenty of caprylic acid which has antifungal and anti-yeast properties (great for balancing candida!). Coconut water is exactly what your body craves this time of year - something cooling and full of electrolytes to help keep you hydrated from the inside out.

A little cooling peppermint oil (a great digestive aid!), raw spinach (sneaking in some greens is always a win), and raw cacao (hello healthy chocolate chips!) are also part of the ingredient line-up, helping to create a mint chip-like effect. This recipe is creamy and just-sweet-enough - the perfect feel-good summer shake.

The Recipe

CBD Matcha Mint-Chip Shake

Makes 1 large serving or 2 small

Ingredients

1 packet frozen coconut meat (can be found in the frozen fruit section at Whole Foods)

1.5 cup coconut water (we recommend Harmless Harvest brand for a fresh taste)

1 cup light coconut milk, frozen (freeze in an ice cube tray)

2 tsp raw honey or maple syrup (or leave it out - the coconut water is sweet!)

1 small handful of baby spinach

2 tsp matcha powder, latte-grade

2 tsp raw cacao nibs

1 dropperful Veggimins USDA Organic Peppermint CBD Extract - 500 mg
1/4 tsp vanilla extract
1 drop of peppermint essential oil*
Pinch of Himalayan salt

*Not all essential oils are created equally. Make sure you use one that is organic and for culinary/dietary use otherwise you may be getting additives and chemicals. If you don't have access to this, no worries, your shake will be delicious without it too!
Steps
1. Freeze your coconut milk in ice cube trays 1 day prior so they're ready to go.
2. Blend all ingredients except mint oil and cacao nibs until smooth. Then add mint oil and nibs and pulse until incorporated. This keeps the nibs chunky like "chips" and the peppermint oil tasting nice and fresh. Top with more nibs, a sprinkle of matcha and some fresh mint leaves and snap a pic for insta!
