Raw Vegan Maca Vanilla Cream Banana Soft Serve (Recipe!)

Have you ever created a recipe on a total whim and had it turn out so good it became your new favorite thing? This is one of those recipes. In an attempt to keep cool during the last heat wave we were in desperate need of something creamy, cold, and sweet. Nicecream time! And lucky for us we happened to have a freezer stock piled with plenty of frozen bananas (always recommended!). We decided to get a little fancy and add in some other ingredients. Our Veggimins Maca Matrix has such a delightful malty-sweet flavor, and paired together with the frozen banana, vanilla, and coconut, the result was almost like a combination of butterscoth, banana pudding, and vanilla creme, but in a frozen soft-serve form. Soooo tasty! Peruvian maca is also known for its ability to boost energy levels and endurace, definitely something needed during the hottest days of summer when all you want to do is lounge around by a cool body of water. Our Maca Matrix contains 4 different varieties of organic raw maca root: white, red, black and gelatinized maca powders - it's highly concentrated, very potent, and incredibly fresh tasting. The Recipe

Maca Vanilla Creme Banana Soft Serve

Serves 2

Ingredients

1 cup frozen coconut milk, frozen in ice cube trays (will be about 6 "ice cubes")

2 cups ripe banana, frozen and chopped

1 Tbs Dastony Stone Ground Almond Butter

2 tsp Veggimins Maca Matrix

1.5 tsp vanilla extract

1/4 cup pure water

Pinch Himalayan pink salt

Instructions

1. Freeze your coconut milk. We used full fat from a BPA-free can, but you could also make your own creamy coconut milk using coconut flakes and water, and a nut milk bag for straining. Freeze coconut milk in a normal ice cube tray until solid - about 2-3 hours. You'll also need to freeze your bananas. Make sure the bananas you use are nice and ripe - you'll know they're ready to freeze when they start getting spotty.

2. Blend ingredients until smooth. You can use a food processor OR blender. A blender will require a bit more water and more stopping and scraping. Be patient, try not to add any more water than neccesary for the thickest, most soft serve-like effect.

3. Top with your favorite toppings - like CHOCOLATE. We used one of our Rawmio Puffed Cereal Crunch Barks. Toooo good!
