Plant Based Pistachio Chia Pudding

Are you a pistachio pudding lover? While the kind you find in a box is full of refined sugar, food dye, dairy and additives, this version is raw, plant based and packed full of superfood nutrition.

Chia seeds offer a great source of omega 3 fatty acids as well as protein on a plant based diet. They're also full of soluble fiber, and when mixed with a liquid like plant based milk, thicken up into a pudding-like consistency. 

This recipe is made with Dastony's stone ground raw pistachio butter, which is a heavenly treat whether you're eating it by the spoonful, or blending it into a recipe like this.

The Recipe

Raw Pistachio Chia Pudding

Serves 1

To make pistachio milk:

1 cup plant milk - such as almond, coconut or oat
1 Tbs Dastony raw pistachio butter
1 Tbs maple syrup
1/2 tsp green powder (spirulina, a grass blend, or matcha work great)
1 tsp vanilla extract
1/8 tsp almond extract
Pinch Himalayan salt

Keep separate:

3 Tbs chia seeds

Steps

1. Combine all pistachio milk ingredients in a blender and blend until smooth.

2. Place 3 Tbs chia seeds in a glass jar or container with a lid and pour milk over the top, stir well.

3. Place in the refrigerator for at least a few hours (or overnight) to form a pudding. Make sure to give it a quick stir at least once or twice to keep it from clumping.
