Today's recipe just goes to show how mind blowingly simple it is to make healthy plant based cuisine that is both packed full of superfood nutrition AND equally delicious. If tapioca pudding is one of your favorite comfort foods, and you haven't yet tried your hand at chia pudding, now is the time.
Chia seeds are an incredible source of anti-inflammatory omega 3 fatty acids, contain complete plant-based protein, and also offers a good supply of micronutrients such as calcium, manganese and magnesium. They're also a great source of dietary fiber for healthy digestion. Chia is a a great low calorie energy source, and eating them is said to help increase strength and endurance. In fact, the word "chia" actually translates to "strength" in the ancient Mayan language. When soaked, chia swells and becomes thick and pudding-like, making them the perfect superfood, starch-free alternative to tapioca.
Here is a delicious and incredibly simple vanilla chia pudding paired with our gourmet Rawmio Chocolate Coconut Spread and a plethora of fresh seasonal berries. Definite comfort food...only superfood-style.
Easy Rawmio Chia Pudding Parfait
3 Tbs chia seeds
1 cup fresh, unsweetened almond milk (or nut milk of choice)
1/2 tsp vanilla extract
1/2 tbs maple syrup, or your choice of sweetener
1 Tbs Rawmio Chocolate Coconut Spread
1 handful of fresh berries
1. Pour your unsweetened plant based milk of choice into a glass jar. Add chia seeds. Stir or shake thoroughly.
2. Let sit for at least several hours in the fridge until it thickens into a pudding. Try to stir or shake the mixture at least once or twice while the chia is expanding to avoid clumpage.
4. Layer chia pudding with Rawmio Chocolate Spread and fresh berries. ENJOY!
