Farewell Summer Cleanse: How to Make Raw Vegan Detox Soup with Allllll the Veggies

By now most of us are no stranger to the concept of sneaking some veggies into all kinds of recipes. Take smoothies for instance: it's so easy to add in a handful or two of greens, or if you're feeling really adventurous, something like frozen cauliflower or zucchini, without your taste buds (or your kids!) even knowing you've done it. The sweetness and flavor of fruit completely masks the vegetables. But what if you could make a veggie blend sans fruit that actually tastes delightful? It's time to take a walk on the savory side!

Going Savory

A raw blended green soup is a great sugar-free alternative to fruit-based smoothies that can be enjoyed alongside a meal, or as a meal replacement during a detox to help facilitate cleansing. Perfect for the tail end of summer when most of us have been out having (maybe a little too much?) fun. Blended raw green soups are packed full of fiber, enzymes, vitamins, minerals, phytonutrients, and healthy fats, and if properly formulated, can be quite delicious! Think a tasty salad with all of your favorite fixings, only in blended form. One benefit of blending over juicing is that the fiber remains intact for a great cleansing benefit to the GI tract. However, just like juice, they take minimal energy for your body to digest and assimilate the bounty of nutrients. Blended soups will also keep you feeling satisfied during a cleanse since you can incorporate plenty of healthy fats and proteins into the recipe.

The key to making a great raw detox soup is balancing the stronger, more pungent, and/or bitter flavor profile of the greens, herbs, and vegetables with adequate acidity from lemon, healthy fats from cold pressed oils, nut butters, or avocado, saltiness from a high quality source of salt, and a touch of sweetness from ingredients like cherry tomatoes or bell pepper. Another tip is to not skimp on the herbs and/or spices. Adding ingredients like fresh parsley, basil, cilantro, and dill will help boost the soup's cleansing properites all the while adding a mighy punch of flavor, not to mention all of those additional phytonutrients. Blended Green Garden Detox Soup

Serves 1

Ingredients

1/2 cup sweet cherry tomatoes (or use the sweetest, juiciest tomatoes available)

1 stock of celery

1/2 medium zucchini

1/4 cucumber, peeled

1-2 handfuls of dark greens (kale, swiss chard, arugula, spinach)

1 handful of fresh herbs (basil, cilantro, parsley)

Juice of 1 small lemon or lime

1/2 small avocado

1 small clove garlic, or slice of red onion - optional

1 Tbs Dastony Stone Ground Raw Tahini

1 tsp unpastuerized miso paste

1 dropper of Veggimins Organic Hemp Oil with Hemp Extract (CBD Extract)

Water to desired consistency (start with 1/2 cup and go from there)

Himalayan salt and pepper to taste

Instructions

1. Place your most water-rich veggies in your blender carafe first (ie tomatoes and cucumber) to help ensure the blades catch. Add remaining ingredients on top. Add a splash of water and blend until smooth. Add more water based on your desired consistency. Taste and adjust salt and seasoning. Enjoy!
