While pumpkin and persimmons might not be something you've ever thought to combine before, they really are a match made in heaven. Both of these superfruits are rich with phytonutrients, flavonoids, and antioxidants to help give the body a boost, and when blended together, they form a smooth and dense pudding-like texture - just like pumpkin pie filling. Immunity-Boosting Persimmon Pumpkin Pie Pudding
2 ripe fuyu persimmons - medium sized (make sure they're ripe! They can be firm but should give to pressure - like a pear.)
1/2 cup canned organic pumpkin puree (preferably with BPA-free lining!)
1 cup young Thai coconut meat
1/2 tsp vanilla extract
1.5 tsp fresh ginger minced
1/2 tsp cinnamon
1/8 tsp nutmeg
2 doses of Sunbiotics Probiotics Powder (2/3 tsp)
Optional: maple syrup to taste for additional sweetness
1. Blend all ingredients until smooth and perfectly pudding-like.
