    This recipe was Nicole Axworthy's entry in Yum Universe's birthday themed whole foods recipe contest! it is an epic 6 layered brownie blizzard ice cream cake complete with truly raw cashews, cacao, coconut and more! Nicole describes her highly creative culinary creation: Layer one includes "a dense, chocolatey, brownie cake base." Layer 2 is "a smooth, light vanilla soft serve." Layer 3 is "creamy macadamia nut caramel." Layer 4 is almond and chocolate cookie crumbs." Layer 5 is "more vanilla soft serve, but with thick brownie chunks." And last but not least, layer 6 tops the cake "with a smooth chocolate ganache and more brownie chunks". If someone is offering to make you a raw cake for your birthday, hand over this recipe with a wink and a smile! It may take a bit of time to prepare but there is no question as to whether it will be worth the effort!

    Is your meal seriously lacking flavor? Add a tbs of this fabulous wild leek pesto to your meal and spruce it up a notch or two! This pesto works well on both raw pasta and cooked pasta alike, or can be added to sprouted or cooked grains, salads, salad dressings, or even the base of a raw soup! Knowing how to make a smashing raw pesto is a great skill to have! This recipe calls for wild leeks also known as "ramps" which are highly nutritious and contain flavonoids like quercetin. Quercetin is especially great for treating inflammation associated with seasonal allergies. Wild leeks can be wild harvested or found in speciality shops or at the farmers market. If you can't locate wild leeks in your area try this recipe out with a combination of fresh basil, baby spinach, and spring onion or regular leeks.

    Can the term "healthy" be legitimately used in the same sentence as "brownie". Well, with this recipe the answer is absolutely Yes! This recipe has few ingredients, so Chef Sarah Britton recommends you purchase the best quality, raw, organic ingredients you can find for optimal flavor pay off (and health benefits from the highly nutritious ingredients like raw cacao and walnuts!) When you bite into these brownies you will be amazed by how light and cake-like the consistency is. Grinding the walnuts into a fine powder will help you achieve this effect.     Tahini dressing is a classic staple in raw food cuisine for good reason. It as a very distinctive yet versatile flavor and is richly satisfying. Also, it goes very well with pretty much any vegetable mix under the sun. This recipe has a very nice balance of different tastes: sweet from raw honey, acidic from apple cider vinegar, creamy richness from tahini, saltiness and depth from shoyu, and spice and flavor from chives and garlic. And a nice mellow dose of fresh cucumber. Traditionally tahini is made by grinding sesame seeds into a thick butter. You can either make the tahini yourself by using a blender or food processor to blend the sesame seeds until smooth (which can take time and patience and you may need to add some additional sesame oil) or you can purchase pre-made raw tahini in jars. Having some good salad dressings around is a great help when it comes to success on a healthy diet! This recipe was an experiment by Chef Hannah Mendenhall and she encourages you to play around with ingredients and make it your own!
