relies on the natural sweetness found in fresh carrots along with a touch of stevia or xylitol (a low glycemic sweetener derived from birch). She developed this raw carrot cake while on a candida cleanse, so if that's not currently you feel free to sub in your favorite raw sweetener of choice such as coconut or yacon nectar, honey, or coconut sugar. Eat as is or make a quick icing from soaked cashews, vanilla, stevia, lemon and salt blended until smooth. ENJOY!
