This recipe is the taste of fresh simplicity. Freshly diced sun ripened tomatoes combine with chopped parsley and onion, mixed with a drizzle of extra virgin olive oil and a pinch of salt. There is no need for more! Gluten free and all raw, this is a wonderful side salad to accompany some sprouted chickpea hummus and tahini dressed greens.
Ingredients 3 ripe tomatoes
a bunch of parsley
salt & olive oil
Directions 1. Cut everything into very small bites.
