Superfood Chaga Cheesecake

Here's a really delicious medicinal cheesecake packed with superfoods!  So go ahead and have a piece for breakfast or when you hit the 3pm super craving. This is what you want to be eating instead of a chocolate bar or some other unhealthy sugary item. In this recipe, Heather Pace of infused chaga tea into the cheesecake, instead of using water.



  1. 1/2 cup shredded coconut
  2. 1/3 cup walnuts
  3. 1/4 cup pitted dates
  4. 2 tablespoons ground flax seed


  1. 1 1/2 cups raw cashews
  2. 2/3 cup chilled chaga tea
  3. 1/4 cup + 1 tablespoon maple syrup
  4. 3 tablespoons lucuma powder
  5. 1 tablespoon maca powder
  6. 1 tablespoon baobab powder
  7. 1/2 tablespoon mesquite powder
  8. 1/2 teaspoon suma root powder or ashwaganda
  9. 1/2 teaspoon pure vanilla extract
  10. Pinch of salt
  11. 1/2 cup melted coconut oil
  12. 1 tablespoon cacao powder
  13. 1 tablespoon maple syrup


  • Process all ingredients until crumbly in a food processor.
  • This should hold together fine without any water but if needed, add 1/2 teaspoon water and process briefly.
  • Press into the bottom of a 6″ spring form pan.

  • Blend the chaga tea, cashews, and maple syrup until completely smooth.
  • Add the powders, vanilla, salt, and coconut oil.
  • Blend until smooth.
  • Transfer 1/3 cup of the mixture to a bowl.
  • Whisk in the cacao powder (sift it in) and maple syrup.
  • Pour the superfood mixture over the crust.
  • Spoon blobs of the chocolate mixture on top and gently push it into the other filling with a spoon.
  • Use a chopstick to swirl the mixtures together.
  • Chill in the freezer for 4-6 hours and then transfer to the fridge for 12 hours.
  • Garnish with cacao nibs along the edge.
