    So creamy, so rich, so decadently cheesecake-like. Is this a dream or is this real life? That is the question that you'll be asking yourself as you take a bite of this raw raspberry dream cake. This is definitely the recipe to take with you to a party, something that everyone will enjoy! If you don't have raspberries available try strawberries, blackberries, or even a combination of the 3! Don't be turned off by the coconut oil in this recipe. Many people don't realize that even though coconut oil is a saturated fat, the molecules are medium chain triglycerides which digest quickly and are utilized as energy by the body almost instantly. This is much different than other forms of saturated fat (long chain triglycerides) from both plants and animals which require a lot of energy and enzymatic breakdown by the body to utilize and are much more likely to be stored as fat. And to top it off coconut oil is also very anti-fungal and also helps give our skin and hair a glow from the inside out!

    An amazing Spring and Summer appropriate dessert from the Queen of raw desserts herself, Heather Pace! Look at the beautiful color combinations of bright berry red and creamy muted ocre. The crust of this tart is extremely simple, just nuts and dates. The filling is equally simple and combines a layer of mashed raspberries with a layer of sweet decadent mango cream with added richness and texture from cashews, coconut oil, and cacao butter. This tart will slice well and plate up very nicely. Heather has really mastered the texture of her desserts! Sunshine has just been confined to a pie crust!

As usual she gives you plenty of ideas for substitutions so it's easy to prepare even if you don't have the exact ingredients she used on hand. The recipe is then finished with a thin layer of lemon curd which is both pleasantly sweet and tart all at once.     The nice thing about this recipe is that you can modify it a number of ways.  I've made a similar recipe before using peaches for the filling instead of blackberries.  You can also use mangoes, or any combination of berries.  And for the crumble, you can substitute pecans for walnuts.

    Organic strawberries are starting to pour in from California. I picked up a couple of pounds the other day and made this pie. I adapted a recipe of Matthew Kenney's from his book Everyday Raw. He is one of the original owners of Pure Food and Wine in New York. FYI....I tested this out on 5 different children and they all loved it! My son Isaac does NOT like crust (as he informs me every time I make a raw pie) so I pour some into a little bowl for him to eat like a pudding.
