Royal Green Superfood Cake with Peppermint Essential Oil

A chia and coconut-based crust topped with 2 superfood-loaded, nutrient and antioxidant-rich avocado puddings: a refreshing peppermint flavor featuring chlorella, green tea matcha, raw honey, coconut oil and mint essential oil, and a lush chocolate layer featuring the same superfood line-up plus raw cacao. This cake from Samia of Alchemy has a strong tropical influence from all of the coconut flake goodness, and is packed full of nourishment for your beautiful body.
Ingredients For the crust: 3 TBS chia seeds 1 glass oat milk 10 dates 2 TBS coconut flour 4 TBS coconut flakes
For the green layer: 3 big avocados 2 TBS coconut oil 2 drops mint essential oil the juice from 1 lemon 1 tbs green tea matcha 1 tbs chlorella Raw sugar or honey to taste
For the chocolate layer: half of the green layer mixture + 2 TBS cacao powder
Directions For the crust I just processed everything together and placed it on the bottom of a cake mould.
For the Green and Choco layer, I mixed all together till it became creamy and flagrant and poured first the green layer, followed by the chocolate one. I froze it for like 30 mins and took it out to top it with lots of coconut flakes and fresh peach slices.
