Raw Deconstructed S'mores

Who said s'mores can't be healthy? With the combination of raw biscuits, raw mallow fluffs, and raw chocolate dip recipes, you'll find this intoxicating treat bursting in your mouth!
 

Ingredients

For the Biscuits:

Ingredients
1/2 cup walnuts
1 cup dates, pitted
1/2 cup desiccated coconut
1/4 cup buckinis
1 tsp cinnamon
1/2 tsp vanilla
pinch salt

For the Marshmallow Fluffs:

Ingredients
1/2 cup water from canned chickpeas
1/3 cup rice malt syrup
1/3 tsp vanilla powder or essence
(optional 1 drop of almond essence)

For the Chocolate Dip/Sauce:

Ingredients
1/4 cup raw cacao powder
1/4 cup melted coconut oil
3 tbsp rice malt syrup
 

Directions

Biscuits:

Place all the ingredients into a food processor and run until slightly sticky dough is formed. Use a baking paper or plastic wrap and flatted the dough between two sheets. Pop in the fridge to set. Use cookie cutters or knife to cut the cookies.

Marshmallow Fluffs:

So, we are only going to use the water from the chickpea can (save the chickpeas for something else). Pour the water into a large mixing bowl, add the remaining ingredients and beat with electric mixer (high emphasis on electric!) for 12-15 minutes. It will look thin for a while, but trust me it will work! The mixture will start to thicken around 10 minutes. Cover and refrigerate the left overs.
