Ingredients

For the crust:

  • 3 TBS coconut flour
  • 1/2 cup almond milk
  • 6 solomon dates

For the cream:

  • 1 cup soaked cashews
  • 1 Madagascar vanilla stick
  • 1/2 cup almond milk
  • 6 TBS coconut oil
  • juice from 1 lemon
  • 1/2 cup fresh raspberries
  • For the topping:
  • Lots of frozen berries

Directions

FOR THE CRUST:

Place everything in a food processor and blend until a homogenous dough is obtained. Place the mixture on the bottom of cake pan and set aside.

FOR THE CREAM

Place all the ingredients of the cream in a blender and blend until smooth. Pour over the crust and top with frozen berries. Refrigerate for 1 hour before serving.
