Raw "Cheese" Stuffed Celery

Cutting down on sugar for the new year ahead? Here is a great snack idea from Amy Lyons of Fragrant Vanilla that also happens to be the perfect New Year's party appetizer. Crunchy, salty celery goodness stuffed with a raw vegan mac nut "cream cheese" mixture topped off with paprika. So yummy!

Ingredients

Cheese:
2 cups raw macadamia nuts, soaked in filtered water for 8 hours and drained
juice of one lemon
1 tsp cider vinegar
1 garlic clove
1/2 tsp sea salt or himalayan salt
2-3 Tbsp filtered water

about 8 large organic stalks celery cut into 4 inch sticks

smoked spanish paprika

Directions

In a high speed blender combine all the cheese ingredients and blend until smooth and creamy.  Place in a pastry bag and pipe into the hollow of each celery stick.  Sprinkle them all with the paprika and serve.
