Pumpkin Seed Pesto Zoodles

If you're a gardener (or frequent the farmer's market), it's likely you've got an abundance of zucchini and summer squash around you right now. Not sure what to do with it all? Try making zuchinni pasta and tossing it with this flavor-packed pesto by Koko Brill of Kokos Kitchen for some seriously happy taste buds.
Ingredients 2 cups fresh basil 1/4 cup raw cashews 1/2 cup raw pumpkin seeds (make sure they are unsalted) 1 clove garlic zest and juice of one lemon 1 tablespoon nutritional yeast 1/4 teaspoon sea salt freshly ground black pepper, to taste 1/2 cup olive oil
Directions 1. process ingredients in a food processor until smooth.
2. spiralize several large zucchini, toss with pesto, add sun dried tomatoes, cherries tomatoes, raw olives,or other ingredients of your choice, and enjoy!
