Pumpkin Pie Tart
Difficulty 5 minutes Serves 6 tarts or 1, 9 inch pie
Easy as pie! These pumpkin pie tarts are as easy to create as they are to devour. And they will only take a few minutes to prepare!
1/4 C Raw Sunflower Seeds
1 3/4 C Pumpkin Seeds, dehydrated
1/2 t. Sea Salt
1 C Medjol Dates
16oz of blended pie pumpkin puree (you can use straight sugar pie pumpkin or use a combination of pumpkin, yam, or butternut/kabocha squash. Make a thick puree by blending the meat with just a bit of water or coconut/almond milk)
2 t Pumpkin Pie Spice
1 t Cinnamon
Handful Raw Cashews (thickens the filling up)
1) Process the sunflower seeds into a fine powder.
2) Add the pumpkin seeds, and salt until a meal forms. Add the dates slowly and process until the mix comes together.
