Peanut Maca Banana Ice Cream with Chia Vanilla Pudding and Blueberries

If you only had either chia pudding or banana ice cream, but never the combo of them in one- try it now!! This recipe by Nadia Damaso of Eat Better Not Less is so healthy and nourishing, and it will keep you full for hours. Plus with that added boost of maca it's bound to put a nice amount of pep in your step. Enjoy!
Ingredients FOR THE CHIA PUDDING:
3 tbsp chia seeds, black or white (I used white)
250 ml almond milk
1 tsp pure vanilla extract or seeds of 1/2 vanilla bean
Directions 1. Add the chia seeds, milk, vanilla extract and sweetener into a bowl and stir until well combined. Soak in the fridge overnight or for at least two hours.
2. Take the frozen banana slices out of the freezer and thaw for a few minutes. Add into a blender/food processor with all the other ingredients and blend until smooth and creamy.
3. Stir the chia pudding again to avoid chunks and add into a jar alternately with the banana ice cream & blueberries to the top.
4. Sprinkle some crushed peanuts or 1 tbsp of your favorite crunchy granola on top and enjoy, enjoy, enjoy! (With a long spoon to dive all the way to the bottom & get a little bit of everything on the spoon!;))
