P​apaya Mango Cheesecake

 P​apaya Mango Cheesecake
Difficulty 5 minutes Serves 1 Cheesecake
This is such a delightful sweet and tangy cake

Ingredients

For the base

1 cup dried mango (pre-soak for 30 minutes in hot water from the kettle)
1 cup cashews
2 tbsp raw honey
1 tbsp almond nut butter
1 level tsp sea salt
1 tbsp melted cacao butter
1 tbsp bee pollen


For the cheesecake filling

1 cup dried mango (pre-soak for 30 minutes in hot water from the kettle)
1 cup fresh papaya
3 tbsp lecithin
3 tbsp raw honey
2 tbsp lemon juice
1/4 cup cacao butter (gently melted)
1 tbsp almond nut butter

Directions

For the base

Process well in a food processor until you get a sticky mass which is pliable.

Press into a cheesecake pan (pre-line with cling film/saram wrap)

​Pop into the freezer whilst you prepare the filling.



For the cheesecake filling

Blend well to a cream and pour over the base.

Set in the fridge or freezer until firm and decorate with bee pollen.
