No Bake Nut Butter Bars

The dry mix:
1 cup almonds
1 cup rolled oats


1) In a food processor, blend the dry mix ingredients until coarsely chopped. Put the mixture into a medium to large bowl. Add an extra tablespoon of oats, pepitas and sunflower seeds for crunch

2) Combine all the caramel ingredients in a food processor until smooth. Add the caramel to the oats and nut mixture, use your hands to mix the caramel into the dry mix. It will be a sticky process!

3) Line a flat square tray with grease proof paper. Empty the mixture into the tray and push down firmly, you want the mixture to be around 2cm thick.

4) Place in the fridge for around an hour to set. Slice into bars, mine are around 8cm long.
