Difficulty 5 minutes Serves 1 (or 2 starter-size salads)
Does light and fresh sound like just what the doctor ordered today? Try this yummy salad by Emma Potts of Coconut and Berries
featuring fresh greens, blackberries, nectarine, basil, hazelnuts and a sweet blackberry vinaigrette. If you don't have access to nectarines this salad can be altered to utilize the season's freshest offerings. Try fresh pears if stone fruit is out of season. The berry dressing would also taste amazing with raspberries, and if you can't find fresh frozen is a great 2nd best. Enjoy!
