Key Lime Pie

Glorious, delectable, silky smooth, tangy-sweet raw key lime pie by the ever-talented Amie Sue of Nouveau Raw. The filling is entirely nut free making it much lighter on the tummy. You can choose to emit the Irish moss gel, however the texture will not be quite as firm. A classic and timeless dessert that's lovely for all occasions.


Crust Ingredients:

1 cup raw pecans, soaked and dehydrated
1 1/2 cup raw macadamia nuts
1/4 cup packed-pitted Medjool dates
1 Tbsp lime zest
1/2 tsp ground cinnamon
1/8 tsp sea salt

Filling Ingredients:

1 1/2 cup of *heavy Thai coconut milk
1/3 cup ripe avocado, mashed
1 cup raw agave nectar
1 cup key lime juice (or 3/4 cup lime juice and 1/4 cup lemon juice)
1/4 tsp sea salt
1 cup raw coconut oil, warmed to liquid
3 Tbsp lecithin powder

Topping Ingredients:

1 1/2 cup of *heavy Thai coconut milk
1/2 cup Thai coconut meat
1/2 cup raw agave nectar
1/4 cup **Irish Moss gel
1 tsp vanilla extract
1/4 tsp sea salt
2 Tbsp lecithin powder
1/2 cup coconut oil, warmed to liquid
