Fig Pecan Energy Bars

Ingredients 1 teaspoon chia seeds, soaked in 1 tablespoon water 1 cup pecans (preferably sprouted) 1 cup raw almonds (preferably sprouted, or extra pecans) 1 cup dried figs, roughly chopped and soaked in warm water for at least 10 minutes 1 tablespoon lemon juice Vanilla powder and Himalayan crystal salt or sea salt, to taste Cinnamon, to taste (optional) Water, as needed for binding Toppings: cacao nibs, lime zest, shredded coconut, goji berries
Directions 1. Soak your chia seeds in 1 tablespoon of water for 5 minutes. This will turn into chia gel.
In the meantime, put your pecans and almonds in a food processor fitted with an S-blade. Mix until finely ground.
2. Add the soaked figs and mix again.
3. Add the lemon juice, chia gel and vanilla powder, salt and cinnamon to taste. Mix again. Taste and adjust the flavoring if needed.
If your dough is too crumbly, add a little water to the mixture and mix again. You will know the dough is ready when it forms into a ball.
