Easy Sugar Free Raw Chocolate Pudding

Creamy, rich, chocolatey and decadent, yet super low glycemic and easy on the blood sugar, this chocolate pudding by Summer Sanders is destined to become a staple in your diet. Don't be thrown off by the avocado, you wont even be able to taste it over the flavors of chocolate, coconut and vanilla. Use xylitol ( a natural sweetener derived from birth trees) for a very low glycemic option, or coconut sugar which will give it a subtle hint of maple. Enjoy!
Ingredients 2 large avocados, pitted and peeled 2 1/2 tablespoons Dastony coconut butter 1 tablespoon coconut oil 1/2 teaspoon vanilla extract 4 tablespoons xylitol or coconut sugar 1/2 large banana 1/4 to 1/2 cup raw cacao powder 1 teaspoon maca (optional if making for children) 1/4 teaspoon sea salt 3 strawberries for topping 1/2 cup walnuts
Directions 1) Blend all ingredients (except, strawberries and walnuts) in a food processor or vitamix.
2) Top with berries and walnuts and serve! So easy and so delicious!
