Cranberry Grapefruit Slices!

. They've got two ingredients that also help boost the metabolism: coconut oil and grapefruit (winning!). Enjoy!
Ingredients For the crust... 1/2c of dried (unsweetened) cranberries 1/2c of shredded coconut 1/2c of oats or buckwheat groats (or both) 1/4c of coconut oil 1tbsp of coconut nectar 1tsp of freshly grated ginger For the grapefruit layer... 1c cup of shredded coconut 1/4c of coconut oil 1/4c of coconut flour 1/4c of freshly squeezed grapefruit juice 1tbsp of grapefruit zest 1tbsp of coconut nectar
Directions For the crust...
1) Process all of the above in your food processor until well combined.
2) Press the mixture into a parchment lined loaf pan and set aside.
For the grapefruit layer...
1) Process all of the above in your food processor until smooth and creamy.
2) Spread over the crust, pack it all down and place it into the freezer for 30-60 minutes.
3) Slice and enjoy!
Store in the fridge.
