Coconut Cream Pie

Is there really anything better than coconut cream pie? The answer is no not really, unless of course said pie is made with entirely healthy ingredients! If you're a little more than obsessed with all things coconut than you will love indulging in this decadent yet healthful raw coconut cream pie by Andrew Davis of Millennial-Kitchen!
It's made with only a handful of ingredients we bet you have in your pantry at this very moment.
Ingredients Crust Ingredients: 2 cups almonds 1 cup dates 1/2 cup shredded coconut Zest of 1/2 a lemon Juice of 1/2 a lemon Cream Ingredients: 1 + 1/4 cup coconut cream 1/2 cup coconut oil 3 tbsp maple syrup 1 banana Pinch of salt Dash of vanilla extract.
Directions 1) Place all crust ingredients in a food processor and blend until smooth.
2) Press dough down in a square pan and place in the freezer for an hour.
3) Place all filling ingredients in a food processor and blend until smooth.
4) Take the crust out from the freezer and top with the coconut cream filling.
5) Place back in the freezer for up to two hours.
