Chocolate Mint Chia Pudding

With its complete protein content, high ratio of omega 3 fatty acids, and amazing energy boosting properties chia seeds make for an ideal midday pick me up and brain booster. When soaked with a chocolate mint flavored almond milk the result is so delicious you will forget you're eating something with so many health benefits!
Ingredients 1/4c of chia seeds
3/4c of *homemade almond milk
1tbsp of cacao powder
1tbsp of coconut nectar or agave
a drizzle of peppermint oil
*simply blend 1/2 cup soaked almonds with 2-3 cups water. Add a pinch of salt and optional vanilla and sweetender, strain through nut mylk bag
, and enjoy! Alternatively you can blend 2-3 tbs of Dastony almond butter
with water or coconut water for instant nut milk!
Directions 1) Mix the ingredients together in a bowl and give it a good stir. (you may also choose to mix your almond milk with your sweetener, cacao powder, and peppermint oil in a blender, then pour over your chia seeds)
2) Let it sit for a couple of minutes and stir again.
3) Spoon into four dessert bowls (ramekins work great) and place in the fridge until you are ready to serve.
Garnish with some fresh mint and enjoy!
