Chocolate Coconut Bites

Chocolate Coconut Bites

Erin Bosdet of Simply Dish always makes it easy for us to whip up a decadent and visually stunning raw dessert with just a few simple ingredients. If you have shredded coconut, coconut oil, coconut nectar (or agave), vanilla bean powder and sweetened cacao paste (or your choice of raw, dark chocolate) you can make this recipe right away! And of course we recommend that you do - it's so tasty!


2c of shredded unsweetened coconut

1/4c of coconut oil

1 or 2tbsp of coconut nectar or agave

1tsp of raw vanilla powder



1) Process all but the chocolate in your food processor until well combined...about a minute.

2) Press all of this goodness into a parchment lined loaf pan and place it in the freezer.

3)  While it's in the about 50g of raw dark chocolate in a stainless steel bowl and melt over a pot of simmering water until just melted.

4) Use a spatula and spread the chocolate goodness over the top. Before the chocolate hardens, sprinkle a little bit of himalayan salt over the top.

5) Put it back in the freezer for about ten minutes, slice into pieces and voila!
