Cashew Cacao Ghosts

Cashew Cacao Ghosts
Difficulty 5 minutes Serves
A warm cup of spiced tea and these half-pint haunts is the perfect way to kick-off the week leading up to Halloween.


    1 1/2 cups raw cashews
    2 TBSP cacao nibs
    1/4 cup coconut flour
    1 tsp vanilla powder or extract
    pinch of sea salt
    3 TBSP agave nectar
    1/2 tsp orange zest
    optional: 100 mini chocolate chips (I used Enjoy Life brand)


    Pulse the cashews in a blender or food processor into a flour.
    If the cacao nibs are in large chunks pulse them into small pieces.
    Add all of the ingredients together into a medium bowl and stir to combine.
    On a piece of silpat or parchment roll the batter into rectangle about 1/2 inch thick.
    Use a small cookie cutter in your desired shape. I found a small tulip one that could be used for the ghosts.
    Add the chocolate chips as eyes.
    Store in the refrigerator or freezer.
    Makes approximately 50 tiny ghosts
