Apple Cinnamon Nut Balls
Difficulty 5 minutes Serves 4-6
These apple cinnamon nut balls are perfect for the long ride and can easily be stored in the freezer for future snacks. It's like ball form of a Larabar. You could certainly shape these into bars if you like. Enjoy!
Ingredients 2/3 almonds
1/4 cup oats*
1/3 cup packed dried apples
1/3 cup shredded coconut
1/3 cup pitted, packed dates
1 teaspoon cinnamon
1 teaspoon pure vanilla extract
2 pinches of salt
1-2 teaspoons water, as needed
Directions In a food processor grind the almonds and oats down to flour/crumbs.
Add the remaining ingredients except water and grind until a dough is formed. Add the water starting with 1 teaspoon to create a moist dough that will hold together when pressed in your hand.
Roll into balls.
*Use raw oat groats if you want to keep it raw
