Almond Butter Sweet Potato Pie Shake

Whether you wish summer would never end, or you're 1000% ready for sweater weather, hot chocolate, and pumpkin spice (or you're somewhere right in between) this recipe will give you the best of all the worlds. A creamy and cold shake made with nutrient-rich ingredients that tastes exactly like pumpkin pie.

But don't be fooled, this shake doesn't actually contain any pumpkin. Instead, we used another fall favorite - sweet potatoes!
Sweet potatoes are such a great fall staple, loaded with nutrients that help keep us healthy like Vitamins A and C to boost the immune system, lots of calcium and potassium for strong bones and heart regulation, B6 to aid metabolism and red blood cell formation, and loads of fiber for a healthy gut. All of that and they're affordable, they store well, and they're readily available year-round.
Beyond having superfood status, sweet potatoes can also be used as a replacement for pumpkin to make amazing pumpkin-pie inspired shakes and smoothies. The next time you're baking up a batch of sweet potatoes for the week (a great way to meal prep!) be sure to set aside a few to chop up and freeze.
Combined with creamy stone ground almond butter, frozen coconut meat, almond milk, vanilla, and all the right spices, this is the perfect shake to ring in the season!
Almond Butter Sweet Potato Pie Shake

The Recipe

Sweetly Spiced Sweet Potato Pie Shake

Makes roughly 2, 12 oz smoothies

Ingredients

2 cups frozen yam cubes - baked, then frozen

2 cups of unsweetened almond milk

1 packet frozen coconut meat (can be found at Sprouts or Whole Foods)

2 heaped Tbs Dastony stone-ground almond butter or hazelnut butter

3 Tbs maple syrup

1 tsp vanilla extract

1 tsp cinnamon powder

1/2 tsp nutmeg

Steps
Ahead of time: be sure to prep some sweet potatoes. Wash and bake at 450 degrees F for 1 hour. Baking at a slightly higher temp will allow the starches to caramelize making for an even sweeter sweet potato, perfect for smoothies. Allow to cool, then chop and stash 1-2 potatoes in a freezer bag.
1. Blend ingredients together until smooth and ultra-creamy. You can also emit the maple syrup, remove 1/2 of the frozen sweet potatoes (1 cup), and sub in a cup of frozen bananas instead for another variation.
